I learned early in that one zucchini plant is enough to feed an army. With this heat wave we are currently having, my zucchini plant is thriving and producing zucchini like crazy.
So, what can you do with all that zucchini besides gifting it to everyone you come in contact with?
Here are a couple of my favourite recipes.
This afternoon, I harvested this beauty.
I decided to make grilled zucchini spears to go with barbeque wings.
These are a little spicy, still crunchy and very good with ranch dressing.
Here's the recipe:
Make a seasoning mix in a small bowl:
1 tsp onion powder
1 tsp garlic powder
1 tsp Italian seasoning
1 tsp Chipotle spice (I use epicure but you could use chili powder or chili flakes too)
3/4 tsp ground black pepper
1/2 tsp salt
Mix it together and sprinkle liberally over zucchini spears coated with olive oil.
Barbeque on medium heat, 3 minutes per side.
Serve with your protein of choice.
